Text

Noisy places to me can conjure up all sorts of images in my mind such as rock concerts in small venues where just the volume of that noise, everything is moving to being in Hanoi in Vietnam where all the scooters are going. And it’s basically the same in Bangkok with the three wheelers going… And you just have this incredible noise and this hustle and bustle. But what I’d like to tell you about is some restaurants in China where you go in and the noise is just… unbelievable and you know when I’m talking about a restaurant I’m not talking about you know something like somebody’s living room or a place the size maybe two or three living rooms. I’m talking about somewhere maybe a quarter or half the size of a football pitch. Well, maybe that’s a bit extreme, but you know, they are big places, and they have huge open floors and then they have lots of private rooms as well. But the open floor part, they have tiled walls and so with all the people talking, it sounds louder and louder and Chinese people love this. And so, they feel if the place is noisy and the place is full, then it’s more popular. And so, if it’s busy and full and noisy and everybody’s happy, then the food must be good. And so also outside there’s lots of people waiting to go in. But when you first meet, when you first enter one of these places to the uninitiated, it’s horrifying. It’s like, oh my God, we’re going to have our dinner here? And then it’s actually a wonderful experience. It really is. It’s a wonderful experience.
